Buat x susah. Tp ada byk tricks in making pavlova. Some recipe calls for lemon, some are vinegar. I prefer vinegar because it’s hard to keep the other half of lemon. Dah la buang egg yolk begitu saje, takkan la lemon pun nak buang.
Some recipe does call for cream of tartar. Tapi ada lain sikit texture guna cream of tartar. Your batter would be very fluffy, cantik and rasa gojes gile. Kalau dah try buat and you’ll know the difference. Putih telur tu pun senang nak kembang. Seriously!
But!! The pav would not be crispy at the outside. Tu je. Will never be crispy. If u want a crispy pavlova then you shall omit cream of tartar.
My personal preference, i like the crispyness. But I love the texture when I use the cream of tartar recipe. It’s different.
As I said to my friends, no matter how bad the pavlova looks like, it will surely taste good. A skill is needed for the presentation.
